There is no lack of tea in the world, not even of good tea. Teas from all over the world are available in pure form and a variety of blends through e-commerce and in brick and mortar shelves. So why aren’t you drinking them?
There is a lack of common language
When you taste a wine you like it typically comes with information about grape, region, aging method, blend if applicable, and even some tasting notes. When you taste a tea you like it typically only comes with basic information like “black” and whatever the tea company has decided to call it. This makes it hard to define what it was about a tea that you liked, and what it says about other teas you might like.
Further complicating things there are some teas that are very similar or even identical that are described in very different ways by different tea companies, and other teas that are described in similar ways but in reality are quite different.
Even the best teas can taste bad if they are not treated right on their way to and in your cup.
First of all teas with some notable exceptions get stale with time and exposure to UV rays and oxygen.
Second they are ruined by being steeped at the wrong temperature, for example even the nicest green tea is ruined if steeped in 212F/100C water.
Finally teas that are not steeped long enough taste weak, while teas that are steeped too long get bitter.
Your typical coffee shop, even the ones that do great justice to coffee, will fail at all of these by selling you old tea stored in glass jars, steeped at the wrong temperature and served with the tea still in the cup.
